Nutella Cheesecake Pots by the Gluten Free Scallywag

If you’ve been reading my blog for awhile, you know that I absolutely LOVE Nutella.

I love Nutella so much that I’m always up for trying anything that involves Nutella.

Enter Nutella cheescake pots.

These pots are rich and creamy and super delicious. All the goodness of cream cheese and Nutella, mmm.

Even just typing this post makes me hungry for some.

I added more Nutella than the recipe required, since I like having a prominent Nutella flavor. And I also didn’t whiz the chocolate chips in the food processor because I bought the mini chips.

These make a great dessert for a dinner party (or any kind of part, really!), because you can put them into little glass pots or containers which are easy, delicious, and professional-looking.

This will definitely not be the last time I’m making these!

Ferrero Rocher Nutella Cupcakes by Lick the Bowl Good

I don’t know if these technically count as cupcakes, because they don’t have the traditional buttercream/cream cheese frosting. Either way, cupcakes and I have a love-hate relationship. Sometimes they turn out beautifully; other times, they stress me out to no end. But I love that these cupcakes turned out wonderfully with no stress at all. The chocolate cupcakes came together easily and the “frosting” was so easy to put together.

Plus, the thought of Nutella AND Ferrero Rocher together for this Nutella-loving girl was too good to pass up.

Interestingly, the chocolate cupcake recipe for this uses chocolate syrup instead of cocoa powder as most other chocolate recipes do. However,  this cupcake base didn’t impress me – it was a little dry and wasn’t one of the better chocolate cake recipes that I’ve tried. But the combination of Nutella and Ferrero Rocher more than made up for the lack of flavor that the chocolate base was.

How do you resist such layered goodness of chocolate cake, Nutella and Ferrero Rocher?

We ate a couple, and I stored the leftover cupcakes in the fridge. I suppose there’s no reason not to store them outside. But I decided against that in the end, because of how humid things get around here, and because I wanted to ensure that the Ferrero Rocher remained crisp. So the refrigerator it was. Or you could always store them in an airtight container. Problem solved.

My love for Nutella really isn’t a secret. So these sugar cookies were just right up my alley. And they were SO GOOD.

Imagine all the goodness of a sugar cookie combined with the goodness that is Nutella, with a hint of saltiness, oozing from the center when you bite into it. Oh so yummy. Just talking about it makes me crave some Nutella cookies right now.

With the humidity that is typical of Singapore, it helped to leave the Nutella balls in the freezer the whole time and take out a couple of pieces as you go along. Otherwise, they start melting and it gets a little too messy. Also, a cookie scoop, or a mini ice-cream scoop really helps with assembling the cookies – put a little dough at the bottom of the scoop, sprinkle some salt, place the Nutella ball, and scoop up more dough to fill up the scoop. This makes it very easy to release the cookie dough into the sugar to coat.

Once baked, these cookies turned out to be quite big. But hey, the bigger the cookie, the better right? (:

Chocolate Cupcakes with Creamy Nutella Frosting by Sally’s Baking Addiction

This recipe was part of the search for the perfect Father’s Day recipe. But it seems like I’ve been a little out of my element for baking lately, because the Nutella frosting for this batch of cupcakes didn’t quite turn out and hold together like how I’d expected it to.

Since I’m writing this about two weeks after Father’s Day, I don’t quite remember what I did wrong that turned this frosting upside down. (I should’ve written it down, I know.) It might’ve been me sticking the frosting in the refrigerator and coming back to frost the cupcakes later. Or maybe I added too much icing sugar in an attempt to fix it, but it didn’t end up quite as smooth as I would’ve liked in the end.

In any case, I eventually settled for a good ol’ brownie recipe for Father’s Day, instead of stressing myself out with trying to master a new recipe within the week. Looks like I haven’t had too much success with cupcake recipes lately. But to be sure, I’m going to keep trying them until I nail at least a couple of pretty (and edible) ones! (;
