One-pot French Onion Pasta by Joy the Baker

One-pot pasta dishes might be my new favorite thing nowadays. I love how simple and easy it is to put everything together, yet still have such delightful flavors. I especially enjoyed those caramelized onions, mmm. Plus, the arugula adds a delicious dimension to this dish.

Although the recipe calls for Parmesan cheese, I just used Mozzarella because that’s what I had on hand and I just needed some cheesy goodness with this.

I’m adding this to my go-to list of recipes whenever I need a quick meal!

Fusilli Amatriciana with Pancetta from Hamlyn’s Quick Cook Pasta

We generally aren’t huge eaters, so I made this thinking that I would have leftovers for lunch. But it was wiped clean, which for me, is a very, very good thing.

The only substitution I made was using bacon instead of pancetta, and fresh thyme instead of rosemary. And I promptly forgot to serve it with Parmesan cheese although I had plenty of it on hand. My bad. 

But it was delicious regardless. I’m definitely making this again!

Creamy Mushroom Pasta Sauce with Caramelized Onions and Spinach by Julia’s Album

I was in-charge of dinner one evening, so I made this creamy mushroom pasta. This was a simple meal to put together with every day ingredients. Plus, I love the kick that the balsamic vinegar gave this pasta dish.

Just be patient and give the onions enough time to caramelize and get sweet and juicy.

Anyhow, I’m putting this in my list of go-to recipes for when I need to make dinner at the last minute!

One-Pan Pasta by Martha Stewart

After seeing this recipe being pinned multiple times on Pinterest, I finally decided to try it for myself.

And I really liked it! Maybe because of the fact that it’s all in one pot, which saves lazy me from having to do extra dishes (ha). But aside from that, I just loved the novelty of cooking everything in one pot and have it come together so nicely.

I couldn’t find any basil at the grocery store on the day I made this, hence the lack of color. Now I can only imagine how much dimension the basil would add to this already flavorful dish.

I guess I’ll just have to make it again to find out.

21 recipes / sweet + savory

While things have been quiet around here, I’ve been busy in the kitchen. Trying new recipes is still one of my favorite parts of this 21 list (: If you try any of these recipes, let me know how you like them!

I made the first three recipes last month (so overdue, I know), and the cinnamon oat pancakes this morning.

This pasta was a huge hit. I think the combination of meat, mushrooms, and vegetables made this really yummy altogether. I substituted spaghetti for linguine. And I didn’t have any Cajun seasoning on hand so I made my own from this recipe mix. I may or may not have left out a couple of the spices but it was still delicious. While there’s plenty of knife skills involved in this one, I’m definitely making it again one of these days.

Although the recipe calls for egg noodles or rice, I went back to good old spaghetti because that’s what everyone in this house likes. Check out the handy PDF print-out at the end for your recipe collection!

These are a great pick-me-up when you need breakfast on the go or an afternoon snack. And they were gone before I knew it. Green apples + walnuts in a muffin are pretty much a blue-ribbon combination.

I love having pancakes for breakfast on Saturday mornings. This simple hearty recipe incorporates oats into the batter so you get your dose of healthy! Drizzle some maple syrup and add a couple of banana slices and you have the perfect way to kick-start the weekend (:

20 recipes / nutella sandwich cookies + wholewheat penne with cauliflower sauce

Today was completely unproductive from a to-do list standpoint.
BUT, I did accomplish quite a bit if you count in cello class, piano lessons, baking from two recipes, and making dinner.

I didn’t plan on accomplishing two of twenty recipes today. But I did.

We had this pasta for dinner, followed by nutella sandwich cookies for dessert.

I think the recipe I had from Rachael Ray’s book was slightly different from the one I found on her web. And I made several substitutions to the pasta recipe because I didn’t have all of the ingredients. But the siblings liked it anyway, so it’s all good.

(I used regular penne instead of wholewheat, vegetable instead of chicken stock, dried instead of fresh rosemary, parmesan instead of romano cheese, and left out the veggies. Okay, too many substitutions, I know.)

I also made a batch of marbled chocolate brownies for a friend’s birthday this weekend.

Then I made the nutella sandwich cookies. I’ll admit, I tried to be ambitious and make my cookies with butterfly cookie cutters. But then I ran out of time before dinner had to be on the table, so I changed my mind and made round cookies instead. Maybe I’ll try butterfly shaped cookies another day when I have the luxury of more time (:
