One-pot French Onion Pasta by Joy the Baker

One-pot pasta dishes might be my new favorite thing nowadays. I love how simple and easy it is to put everything together, yet still have such delightful flavors. I especially enjoyed those caramelized onions, mmm. Plus, the arugula adds a delicious dimension to this dish.

Although the recipe calls for Parmesan cheese, I just used Mozzarella because that’s what I had on hand and I just needed some cheesy goodness with this.

I’m adding this to my go-to list of recipes whenever I need a quick meal!

Salted Caramel Apple Upside Down Cake by A Pinch of Yum

Last week, I made this cake for a dinner that my friends and I had. And I dare say it turned out quite well!

I’ve never done upside down cakes before so I wasn’t sure how this would turn out. But that caramel sauce, coupled with vanilla ice-cream was pretty delicious!

The original recipe says to bake for 45 minutes, but I prefer the cake to be a little more moist. So I will probably cut down the baking time to 35 minutes next time. The cake came out of the pan perfectly at 10 minutes though.

This is definitely one of those recipes that I was a little apprehensive about in the beginning, but worked out deliciously in the end.

Fusilli Amatriciana with Pancetta from Hamlyn’s Quick Cook Pasta

We generally aren’t huge eaters, so I made this thinking that I would have leftovers for lunch. But it was wiped clean, which for me, is a very, very good thing.

The only substitution I made was using bacon instead of pancetta, and fresh thyme instead of rosemary. And I promptly forgot to serve it with Parmesan cheese although I had plenty of it on hand. My bad. 

But it was delicious regardless. I’m definitely making this again!

Rice Noodle Salad with prawns and Thai dressing by Gordon Ramsay

I made this for lunch one week day for my mom and I.

And it was super flavorful and a huge hit. The dressing is a combination of sour and salty, with a punch of spicy from the red chili at the end. I made one serving and thought it would be more than enough, but my mom and I ended up finishing most of it, with only a small serving leftover.

Delish!

Banana Bread by Bake House

What do you do when you have a comb of ripe bananas in the kitchen?

Make banana bread!

I tried this banana bread recipe after having it on my Pinterest board for over a year. I know, don’t judge. I pin much more than I actually get to try the recipes. But better late than never, for sure.

I omitted the cinnamon chips, but the amount of bananas used made this bread delicious and moist, with added crunch from the walnuts. I also love that I don’t have to use the mixer to make this. It made for a filling breakfast/snack for a couple of days before it was wiped clean! Yum.

Oreo Brownies by Sugar and Snapshots

As I type this post, I realize that I’ve never made Oreo brownies before I tried this recipe. How is that even possible?!

I love Oreo cookies on their own, with the traditional glass of cold milk. But this Oreo brownie combines the goodness of this cookie and chocolate for an absolutely decadent result. It was so delicious that I made it twice within the same week. It was that good.

Just be sure to follow the instructions carefully, especially when beating the egg whites to get the light fluffiness in the brownie.

It is as good as it looks. And addicting. Don’t say I didn’t warn you.

Creamy Mushroom Pasta Sauce with Caramelized Onions and Spinach by Julia’s Album

I was in-charge of dinner one evening, so I made this creamy mushroom pasta. This was a simple meal to put together with every day ingredients. Plus, I love the kick that the balsamic vinegar gave this pasta dish.

Just be patient and give the onions enough time to caramelize and get sweet and juicy.

Anyhow, I’m putting this in my list of go-to recipes for when I need to make dinner at the last minute!

Julia Child’s Eggplant Pizzas by Kalyn’s Kitchen

Starting this week with the deliciousness that are eggplant pizzas. These were so fun and easy to make. Extra props because they’re also vegetarian and (relatively) healthy.

I was looking for a recipe for a friend’s birthday cake and came across these tiramisu brownies that I had pinned on Pinterest. Turns out that these made an interesting combination.

My taste-testers didn’t think this resembled a true tiramisu. But aside from the name, the mix of mascapone cheese and coffee made this pretty good.

My brownies didn’t swirl and marble as prettily as I would’ve liked. But anyhow, I think this kinda makes a fancy, grown-up cake, and a good after-dinner dessert. Yum.

the 22 list | make something with cork

I’m not sure what project I had in mind when I put “Make something with cork” on the 22 list. But with this project, I’m pretty glad I did.

I purchased these inexpensive plain cork coasters and thought they would make a fun addition to my Christmas Post-a-parcel package. These DIY cork coasters came together pretty quickly!

Supplies:

  • Acrylic paint
  • Multi-medium paste (Mod podge or similar)
  • Tape
  • Foam brushes
  • Plain cork coasters

I had several paint colors to choose from, but I eventually went with red and green since I wanted a really Christmas-y look. But I can’t wait to try it with the gold next time for a chic and classy look!

DIY-corkcoasters3Step 1: Tape off your design.

Step 2: Using the foam brush, paint in your design. I found that dabbing the paint on works much better than actually trying to spread it. You might need several coats off paint to completely cover the cork (unless you want it otherwise, of course).

DIYcorkcoasters5Step 3: After waiting for the paint to dry, use the multi-medium paste to seal in the paint. This will keep the paint from running when you put your cold drink on the coaster.

Step 4: Let the multi-medium paste dry completely before use. (Note: The sealant will look white when you first apply it, but it will eventually dry clear.)

And there you have it! Pretty coasters every time you have your drink.

I made two of each design in both red and green, for a set of six altogether.

I love how easily customizable these are. You can even do stripes, or include your initial to get this look. I can’t wait to do this again!
